For The Love of Leffe

Last month I posted on my facebook a question directed to all of you. I was working on a new post for my blog named "for the love of Leffe". The idea behind this post was that I was gonna give 3 dessert combinations with Leffe beer and you guys decide which combination I make for the post on my blog. Dark chocolate/Raspberry/Black pepper/Leffe ruby had a clear win over it's other two rivals Mango/Sesame/Leffe radieuse and Lemon peel/Cloves/Leffe blond, Mainly because of the chocolate part of it, but nevertheless it was a deserved winner, so of to work I went.
To be honest, I was not really worried about the flavours. I mean Dark chocolate and raspberries are like a match made in foodie heaven and the black pepper and Leffe ruby accompanied them very well and would surely give the dish more character. For the raspberry part of the dessert, Raspberries went in the dehydrator for raspberry powder, Raspberries went in a bowl on a hot water bath to make pure raspberry juice. Raspberry puree and agar-agar formed the bassis to make a fluid raspberry gel. Some raspberry puree spread out on a silpat, toped with some black pepper, to dry in a low heat oven to form a raspberry/black pepper paper. And finally with the pure raspberry juice I made raspberry meringue, raspberry crackers and raspberry sorbet. Chocolate wise I made some chocolate sablé breton crumbs, Some dark chocolate croustillant disks and a dark chocolate and leffe ruby cremeux. Finally I made made a Leffe ruby reduction and then i had all my pieces to put together my puzzle. I got some pictures from the result for you guys and if you have any comment or questions feel free to ask, but first I have to tell you that I had a lot of fun doing this and I will probably do something like this again soon. I'm also very happy with the way the dish worked out but ask me this again in a year's time and I would probably do it in a completely different way, that's the beautiful thing about food I guess.
