During the summer there is some nice produce all over Europe, and that makes it exciting for us chefs to let our hair down and put some specials on the menu. So simple as it is, we have been getting some beautiful yellow peaches out of the south of France that scream to be used in a proper way. So I combined them with old fashioned but good local English raspberries and "I'm sorry, but I couldn't help myself" some Lavender out of somebody's garden in West-London.
I didn't want to overdue the lavender, since that turns people off so easily, and that would be a shame cause lavender is such a beautiful product. So I infused the lavender in hazelnut butter, and made small financier domes with that. With the raspberries I made a consommé and the yellow peaches were seared and roasted with some vanilla and lavender. Together with some honeycomb and vanilla ice-cream this summer special must tick all the boxes.
