Even an end has a start!!!

Just like yours, my summer is comming to an end!!! And it looks like im gonna close the books on an interesting summer. In May i got contacted for a seasonal job as head pastry chef on a luxery private yacht, and my gut told me to do it, so thats what i did. Six months of hard work in the mediteranian sunshine, not that i was lying on the deck with a cocktail in my lefthand and a cuban sigar in the other, but still it was a nice summer, an adventure i will never forget. The "Christina O", thats the name of my summerlove. A boat with a mediteranian michelin star cuisine under the careful watch of Don Alfonso's 2 michelin star chef Alfonso Iaccarino, sailing all over the medetaranian sea, from monaco to napoli, from corsica to sicily.



I do have to say i've learned a lot! Making desserts for the rich and famous on a boat isn't that easy as you think. And when people pay you €65.000 for one night on the boat, then no is not the answer they want or deserve to hear. So in other word you need to make the job happen, big or small, hard or easy doesn't matter! And try to imagine getting some ingredients in the middle of nowhere or in a different country. it can really be a mess. But on the other hand, it's the best test a chef can ever endure. you learn how to handle difficult situations, last minute orders and crazy requests, And that really makes you a better pastry chef. Cause i'ts not just about knowing how to make a clean one spoon quenelle or a perfect puff pastry. It's knowing how to do these things with minumum time and maximum pressure, and sometimes with minumum acces to ingredients or material.



The jobs on the boat where very different. From a light lunch or a buffet to a BBQ or a 8-course degustation menu. Petit fours, cookies, chocolats, ice cream, sorbet,...Everything which comes even close to being sweet, i had to do it. Lucky for me the guests have trust in the kitchen team and they let us do what we want to do. So i had the chance to experiment a bit with some stuff, and let my mind go nuts sometimes



But even an end has a start! And it has been a beautiful time on the sea and now its back to reality. Back to london!!! In a few weeks i'm flying back to the capital. Find myself a new place to live and most important a new job! a new challenge! what its gonna be...I cant tell you yet but i'm sure its gonna be a something great. So i will just leave you with a few more pictures of the boat and some of the desserts. Have a great end of the summer!!!
