Marinated forestfruits and Vanilla cheesecake cream

Ok before the summer is over I should post a nice and simple summer dessert. So here it is, no fancy techniques, no powders, no 17 different things on one plate...Just a simple, easy and most important a tasty dessert that everybody can make at home...Marinated forest fruits and Vanilla cheesecake cream.

So first step. we need to make a nice and tasty syrup, since this is the thing which will give most of the flavour to the dessert. We scale 150ml water in a small pan, and we top it up with 150gr cane sugar and 150gr of normal sugar. We bring it to a boil and add 1 cinnamonstick, the inside of 1/2 vanillastick (and the stick as well), 6 green cardemon, 6 star anise, 3 cloves, 20 sechuan pepper balls and 3 dry kaffir lime leaves. We let this infuse for 15min. After we pass it trough a sieve and add 75gr of Balsamico vinigar to it and we let it cool down in the fridge.

In the mean time we can make are vanilla cheesecake cream. Again so simple, with or without a mixing machine at home. You can do it easy by hand with a whisk. So we scale 250gr of Philladelphia cheese and 250gr whipping cream in a mixing bowl. We add the inside of 1 vanillastick and we mix it until we have a firm mix. you can test it by trying to make a quenelle or just a simple scoop. if the texture is ok, we can spread the mix out in a container and make sure the surface is smooth and straight and we put it in the fridge for later.

If the syrup is cooled down we can add some summer fruits to it. Hand ful of raspberries, blackberries, red currants and blueberries. Also cut some strawberries in half and add them to the syrup. Let them infuse overnight.



From now on it's just plating the dessert and your finished. take out your fruits from the fridge and take them out of the syrup, and let them leak out for a while. Place a few pieces of each fruit in the center of the plate. try to create some volume so it is not looking like a flat bunch of fruit. Spoon some syrup over the fruits so they are resting in a bit of syrup. Do ry to find a nice bowl or a deep pasta plate for the dessert, it will make the dessert come out at it's best. Now just take the cheescake cream out of the fridge and make three small quenelles and place them on to the fruits. Now we just take some edible flowers to finish it up and there it is, your refreshing, easy, and tasty summerdessert. enjoy!!!
